Grilled Swordfish w/ Herb Caper Butter
Ingredients
| Unsalted Butter |
6 oz |
| Lemon - Juice |
1/2 each |
| Garlic |
1 each |
| Tarragon - Finely Chopped |
1/2 tsp |
| Chives - Finely Chopped |
2 tsp |
| Capers |
1 tbsp |
| Swordfish |
2 fillets |
| Sunflower Oil |
1 tsp |
| Kosher Salt |
1/2 tsp |
| Ground Black Pepper |
1/4 tsp |
Directions
1. Combine the first six ingredients in a small stand mixer combine using the paddle attachment until well combined.
2. Form butter logs and wrap tightly with plastic wrap. Let chill for 30 minutes. Once chilled, slice 1/2 inch thick rounds to place on your fish. Alternatively, you can still combine ingredients in a stand mixer, then avoid making a log by placing butter mixture in a bowl and spreading it on your fish after it chills.
3. Rub swordfish steaks with sunflower oil and season with salt and pepper.
4. Grill on one side until grill marks are achieved. Flip and repeat on the other side until internal temperature reaches around 135-140˚F (or finish in oven if preferred). Serve each swordfish steak with one slice of herb caper butter right off the grill. Voila!
