First let me just say there's not a drop of food dye in this recipe—it actually gets its vibrant color from spinach! But don't worry; you won't taste the vegetables and neither will your kiddos. This lemonade tastes like...lemonade. It just so happens to be bright green. I like adding some edible glitter before serving for a little extra magic.

Green Leprechaun Lemonade

| Fresh Squeezed Lemon Juice |
1 cup |
| Baby Spinach |
1/4 cup |
| Simple Syrup |
1 cup water + 1 cup superfine sugar |
| Edible Glitter (optional) |
a pinch per cup |
Directions
1. To make the simple syrup, whisk together the superfine sugar and water in a small saucepan over medium-high heat. Simmer until the sugar is completely dissolved, then remove from heat and transfer to a glass jar or bowl. Cool to room temperature.
- 2. As your simple syrup is cooling, combine the cold filtered water with the baby spinach in a high-speed blender. Blend until combined, then strain through a fine mesh strainer into a pitcher or bowl. Stir in the fresh lemon juice and simple syrup.

- 3. Optional: Add edible glitter directly to the pitcher or to individual glasses of lemonade (a pinch per cup) and stir again.
