| Farro | 1 cup |
| Butternut Squash - 1" Dice | 1/2 cup |
| Parmesan Cheese | 1/4 cup |
| Pistachios | 2 tbsp |
| Fresh Mint | 1 sprig |
| Olive Oil | 2 tbsp |
| Lemon Juice | 1 tbsp |
| Cinnamon | 1/4 tsp |
| Granulated Garlic | 1/2 tsp |
| Kosher Salt | 1 tsp |
| Black Pepper | 1/4 tsp |
1. Cook farro according to packing instructions (make about 1 cup). Once it's done cooking, let chill and toss with lemon juice and 1 tbsp of olive oil.
2. Preheat oven to 425°F. Toss butternut squash with 1 tbsp olive oil, cinnamon, garlic, kosher salt, and black pepper. Roast on a sheet tray until browned, about 20 minutes.
3. Layer farro, butternut squash, pistachios, mint, and parmesan. Enjoy!
